I think I have a thing for Asian inspired dishes!
As I have been focused on making healthier
lifestyle choices for myself,
I have also tried to improve the foods that
I am cooking for my family!
My biggest focus in what we are eating is
#1-What is our protein
How can I get as many vegetables in my kids as possible?
When I focus on these two things
I realized my family loves broccoli
so I decided to make a family take-out favorite!
But healthy it up!
1 lb thin cut beef
2 heads of broccoli, chopped
1 tbsp minced garlic
1/3 c low sodium soy sauce
1/2 tbsp minced garlic
1/2 c chicken stock
1/4 tbsp ground ginger
1 tsp red pepper flakes
1 tbsp corn starch
I bought thin cut beef,
used for carne asada or milanesa, at my local walmart.
It was a little more expensive
but so worth the purchse.
I chopped it into thin strips
I then get my broccoli all washed and chopped.
As I stated in a previous post,
cut your broccoli with longer stems
My kids love it and eat tons when
I cut it like this.
I sprayed my skillet with a nonstick cooking spray
and then add a tbsp of minced garlic
to the skillet over med-high heat.
I added the meat and made sure to
separate the meat while cooking.
Cook about 8-10 minutes until it is fully cooked.
While the meat was cooking
I had the water boiling so that I could steam
the broccoli for 5 minutes.
You can cook them together
but this makes it so super fast.
Once everything is chopped
it takes about 15 minutes to cook
While the meat and broccoli
I mix all the ingredients for the sauce
in a bowl and whisk
until well combined.
Once the meat is cooked
I set it aside in a bowl.
When the broccoli is done
I just add it on top of the meat.
I use the same pan that I cooked the meat in.
I drain off the fluids from cooking the meat.
I actually leave about a tbsp of the juices
in the pan for extra flavor.
Return the pan to medium-high heat
add your sauce
and continue to whisk until boils.
Let it boil until the sauce thickens.
Pour the sauce over the meat and broccoli.
Toss well until everything is coated with
Serve over rice.
The only complaint my kids had
was that they wanted more sauce.
So I guess,
maybe double the sauce if you
want extra sauce to pour on your rice!
This really is a super easy and yummy
and healthy dinner!!
