Chicken Lettuce Wrap Recipe!

My family loves Chinese Food!
The people at our favorite
Chinese restaurant
in California
knew us by name!
They knew what was our regular order!
That is how much we love it!

In my journey to get healthy,
I have tried to recreate some of our 
favorite foods.

One recipe that my family loves is
Chicken Lettuce Wraps!

1 1/2 lbs of ground chicken
1 bell pepper, any color, diced
4 garlic cloves, minced
1 tbsp Chinese Five Spice
1 tbsp minced ginger
4 scallions, chopped
1 8 oz. can water chestnuts, chopped
1/4-1/2 cup soy sauce
1/2 c hoisin sauce
1 head iceberg lettuce

1. Heat 2 tbsp oil in wok 
(I used pam to be compliant with my Dukan Diet)

2. Add garlic and sauté until fragrant

3. Add chopped peppers and cook until slightly tender
about 3-4 minutes

4. Add 1 tbsp of Chinese 5 Spice and minced ginger
 and stir to coat veggies.

5. Add ground chicken, stirring to break up chicken
continue until chicken is all cooked.
(Some people chop up chicken into very small pieces
for lettuce wraps, but I really like the ground 
chicken. It is easy to use and I don’t
have to spend so much time chopping)

6. Add scallions, water chestnuts, and soy sauce.
Start with the 1/4 c of soy sauce and add more as desired.

7. Place a large spoonful of chicken into
a lettuce leaf and top with a dollop of hoisin sauce.
(I did not eat the hoisin due to my diet
but oh is it good!)

8. Top with bean sprouts if so desired 
for a little extra crunch!

9. Enjoy

 Chinese Five Spice is a combination of 
anise, cinnamon, star anise, cloves and ginger.
I used less sodium soy sauce
cause I am trying to decrease the amount
of salt I eat.
I haven’t been craving sugars since 
starting this diet,
but I was having a serious craving
last night when we ate these.
I wanted the hoisin sauce soooooo badly.
It’s first ingredient is sugar 
and also has molasses in it.
I resisted the craving
knowing someday
I will eat it again
for tomorrow is weigh in
and I promised myself
I would follow the Dukan Diet with exactness this week.

i am strong
i can take time for me, that is okay
i am beautiful, inside and out
i CAN find time to eat a healthy balanced diet
i am not less of a person if my house is messy
i can do anything i put my mind to


I love lettuce wraps, they are my go to easy meal, my kids even like these. I love making them with chicken and teriyaki sauce.
