I love margarita pizza!
I mean super duper love it!
Funny thing is I don’t really like tomatoes.
But when they are cooked with garlic and basil…
yum, that is happiness.
This recipe was inspired by my love of margarita pizza and wanting those flavors all the time.
My husband and I are doing the Dukan Diet
Greatest thing in the world to do this diet together.
We eat a lot of lean proteins and veggies.
(Like I have said before, check out his book to learn more)
Sometimes I struggle with coming up
with more creative ways to eat the lean proteins.
I don’t want to get bored with my food.
I still have to cook for my family
and don’t want to have to cook 2 dinners a day.
So I had an idea.
My family loves my tomato basil sauce
Before, I wouldn’t make a protein because that is more work.
But we are changing the way that we eat.
So I made my
tomato basil sauce
and put it over chicken.
It was to die for.
(I cooked noodles so that the kids could have
noodles and chicken with their sauce).
Besides being super yummy
it is super simple as well.
The hardest part is all the chopping.
we BBQ’d the chicken.
All we did was season the meat with
McCormick’s Chipotle & Roasted Garlic Grill Mate
(this is not a sponsored post…I just really liked this
flavor of rub with the tomato sauce)
You could use any seasoning, but this one really hit the spot.
While my cute hubby BBQ’d,
I chopped 15 tomatoes.
Any kind works, but I really like the taste of the
when it is all cooked down.
10-12 tomatoes serves enough for 6 people.
Today I wanted leftovers so I did 15.
I often buy less tomatoes
cause I am lazy and don’t want to chop them.
But then my family is licking the pan at the end.
I use my big wok
and spray with a little non-stick spray.
Before this diet
I would have used olive oil,
a couple of turns around the pan.
Place 2 chopped garlic cloves in the pan
and heat until you can smell them.
(I used pre chopped cause I am lazy)
Put all the tomatoes in the pan
over medium heat and let cook.
Add sea salt and black pepper to taste
and stir regularly while cooking.
As their juices start flowing,
I reduce the heat to a simmer.
Sometimes I get distracted…SQUIRREL
and the juices evaporate away.
If that happens,
I just add 1/4 cup of water to get it back to a liquid state.
While this is happening,
I rough chop a whole bunch of basil leaves.
I like basil
so I actually use a whole bunch.
When the tomatoes break up easily with a spoon
and some of the fluids are evaporated away
I know that it is done.
I then add my basil and stir.
Pour it on top of the chicken.
It is also good on the broccoli.
HMMM so delightful!
As a side
I just steamed a bunch of broccoli.I steamed it for about 4-5 minutes.I like it to still have a bit of crunch.

My kids totally gobble it up when it is like that.
I don’t know why.
